At Encinillas, wine is aged in French oak barrels, kept under ideal conditions in our underground cellar.
This cellaring period lasts around 12 to 18 months, the time it takes to reach the optimal maturity point for each wine, in wich a new dimension is added to their natural flavors and aromas.
